The Creation- Reheated baked potatoes sliced over a bed of arugula and spinach leaves, because why not turn everything into a salad? We then finished the dish with all the yummy toppings of a baked potato! We couldn’t decide between cheddar or goat cheese and then there was the issue of bacon or pancetta. We agonized over the decision and before coming to the conclusion: why choose one or the other? We loaded up our bowls and topped each one with a dollop of yogurt and a perfectly cooked, gooey fried egg. Wisdom of the day: everything is better with an egg on top. The real finishing touch was a sprinkling of maldon sea salt for a crunchy savory bite, just like when you cut into the salty skin of a baked potato.

It all started in the spring of 2013, on a fateful day. Picture this, Florence, Italy, the landscapes, the food, the wine, the men. And us. All of the hopeful excitement of a semester studying abroad in a new country.

Our story begins at culinary school, the basis of our dreams. After arrival at the airport, students were placed in cabs to their respective new homes for the next few months. Of all people, these two strangers serendipitously get shoved in a cab together. The two ladies said their farewells at the end of journey, never guessing that they would cross paths again.

As it turned out, these college girls had equal culinary aspirations and proceeded to spend every day working together in class while enjoying the magical city of Florence. But they didn’t stop there. Paris, Greece, Germany! Over the course of the next few months, these wild women took cities by storm, exploring and eating their way through Europe. By the end of their study abroad experiences, there were no goodbyes but only see you laters as they departed for Alabama and New York to finish their conventional education. They had a plan. Rian and Kristina would finish their normal college education and then move on to where their true passions lay.

Fast forward one year filled with many glorious moments of reuniting across America. Autumn tailgating for the LSU Alabama game, winter expeditions in New York city, spring break in New Orleans, and sweltering summers in South Carolina. One could say we were seasoned travelers. (GET THE PUN?!) It was merely the beginning.

We did it. Culinary school.

While Kristina attended the International Culinary Center in San Francisco to see if the grass was greener on the other side, Rian crossed over the pond to attend Le Cordon Bleu in exciting London. The two kept in touch and as fate would have it, Kristina needed a roommate and Rian needed a job. There were no ifs ands or buts, it was the perfect time for these crazy cats to make moves and chase their dreams. Together.

Six months later. Here we are. Sitting on our private balcony (a fire escape) typing the tale of our love for all of you. We invite you to join us on our journey. This is a never ending story of two young women, trying to make it in the big apple with no money but plenty of spunk! Attitude gets you everywhere, and these two have enough entertainment to take over the world. From internships in fine dining restaurants, to their current occupation together as private chefs around the city, they are making their way and coming up in the world! But how do they afford to eat!? Answer: They don’t! Yet. But they still eat damn well. How, do you ask? Scraps! Gourmet scraps! Each evening, these girls reconvene at home with the unwanted or slightly off bits and pieces from their trials of the day. Here is our scrap kitchen, a foodie focused story of two girls sustaining themselves with what they have in the kitchen. Enjoy!
